About this qualification

SIT40721 covers “pastry chefs who have a supervisory or team leading role in the kitchen”, operating independently or with limited guidance and using discretion to solve non-routine problems.

Thirty-two units, twenty-six of them core. It carries the whole Certificate III patisserie core and adds the advanced craft: marzipan modelling, chocolate confectionery, sugar-based decorations, and designing and producing sweet showpieces.

Those four units are the qualification’s reason for existing. SITHPAT020 Design and produce sweet showpieces is competition-standard work — the pieces that go in the window and on the wedding table.

The other addition is management: rostering, leading and managing people, monitoring work operations, managing conflict, managing finances within a budget, and BSBTWK501 Lead diversity and inclusion — unusual in a trade qualification, and a sign of where professional kitchens have landed.

Frequently asked questions

Are there entry requirements?
No. The register records no entry requirements for SIT40721, though it carries the full Certificate III patisserie core inside it.
Do I need Certificate III in Patisserie first?
Not formally, but SIT40721 contains all of SIT31021’s patisserie core. Anyone holding Certificate III should ask about credit transfer rather than repeating those units.
What does it add over Certificate III?
Four advanced craft units — marzipan, chocolate confectionery, sugar decorations and sweet showpieces — plus the supervisory units: rostering, leading people, budgets and monitoring operations.
Is this the same as being a chocolatier?
SITHPAT018 Produce chocolate confectionery is core, so chocolate work is covered. Chocolatier is a job title rather than a separate qualification.
Should I do this or Kitchen Management?
SIT40721 runs the pastry section. SIT40521 Kitchen Management runs the whole kitchen. Both are Certificate IV and both lead to the Advanced Diploma.
