About this qualification
SIT40521 is the chef’s qualification. The register describes “chefs and cooks who have a supervisory or team leading role in the kitchen”, operating independently and using discretion to solve non-routine problems.
Thirty-three units. Twenty-seven are core — every cookery unit from Certificate III, plus seven more that turn a cook into someone who runs the kitchen.
Those seven are the whole story: planning cooking operations, designing and costing menus, developing recipes for special dietary requirements, rostering staff, leading and managing people, monitoring work operations, managing conflict, managing finances within a budget, and developing and implementing a food safety program — not merely following one.
The register also names a second destination: this qualification is a pathway “to run a small business in these sectors”. A lot of the people holding it are not employees.

Frequently asked questions
- Are there entry requirements?
- No. The register records no entry requirements for SIT40521 — which surprises people given it carries the full Certificate III cookery core inside it.
- Do I need Certificate III first?
- Not formally. But SIT40521 contains all of the SIT30821 cookery core, so anyone holding Certificate III should ask about credit transfer rather than repeating those units.
- Thirty-three units. How long?
- Duration is set by each provider, not the register. Ask for the training and assessment strategy before enrolling, and ask specifically how the kitchen practical hours are arranged.
- What does it add over Certificate III?
- Seven management units: planning cooking operations, designing and costing menus, developing recipes for special diets, rostering, leading people, monitoring operations, and developing a food safety program rather than just following one.
- Is this the qualification for running my own kitchen?
- The register names running a small business in these sectors as a destination. Business registration and food business licensing are separate matters handled by your council and state regulator.
